Due
to the increased adulteration (Milawat), I always prefer to cook the sweets by
my own. By this way, I not only ensure the healthy dishes for my family but also
avoid any chance of breaking the fast specially during festivals like Navratre.
I am sharing the recipe of Badam (Almonds) Burfi.
Which is again very easy to make. Also, you will get the best quality of Burfi
with a very good quantity of Badam at a much less rate than Market. Let me
share the details, hope you will like this.
Badam (Almonds) = 1 cup
Kesar (Saffron) Strands = 15-20
Ghee (Unsalted Butter) = 1 Spoon
Cardamom powder = ¼ teaspoon
Sugar = ¾ cup
Milk = 2 spoons
Roughly Chopped Badam (Almonds) for
garnishing
Process:
- Soak the almonds in hot water for one hour. After an hour, peel off the almonds. Because you soaked them, it would be easy to do so. Spread them out on a napkin and then dry them thoroughly. Make sure they are completely dried.
- Now grind the almonds but keep on checking in between and stir it frequently to get a fine powder. Make sure that you do not grind it too much that it will turn into a paste.
- Afterwards, soak some Kesar strands into the milk for 5 minutes.
It’s
time to cook:
- Put sugar and a ½ cup of water in a nonstick pan. Now, place the pan onto the stove on medium flame. Keep stirring until the sugar dissolves. Let the sugar syrup boil until you get a single thread consistency.
- Add the grinded almond powder into the pan. Mix it well, until it becomes a creamy consistency. Afterwards, add the saffron milk to it and stir for a minute.
- Now add 1 tablespoon of ghee and cardamom powder and mix it properly. Once you feel that the mixture has stopped sticking to the pan, turn off the flame.
- Grease a plate and immediately put the Almond Mixture on it. Spread a little bit of ghee on top of the mixture and use the spoon or spatula to smooth it.
- Use the roughly chopped almonds to garnish it and press them in, so it sticks to the Burfi.
- Its time to cut the Burfi of your choice and shape. Let it cool down for at least one hour before you remove it from the plate.
The Badam
Burfi is ready to serve that will be a delicious addition to your snacks during
the Navratre Fast.
